虫草花豆腐汤

中文介绍原料:虫草花3克,嫩豆腐1块,高汤1碗,瘦肉30克,青葱数根,麻油(或不放)虫草花豆腐汤

盐、生抽、红薯粉、料酒、蚝油、胡椒粉、味精(可免)

建议用高汤来作汤底,则可不必再放其它油。没有高汤用清水代替的话,最好放勺猪油,以增加汤的鲜香度。

做法:

瘦肉切成丝,用红薯粉、料酒、盐、生抽、蚝油、胡椒粉腌15分钟;豆腐在盘中切成1厘米宽、4厘米长的小条块;虫草花洗净,用清水泡5分钟捞出,泡过虫草花的水不要倒掉,放进红薯粉拌匀成红薯粉水。

冷锅中倒入高汤和虫草花,大火烧开水,转小火先煮10分钟。

汤色变成红色,下豆腐继续煮10分钟。(“千滚豆腐万滚鱼”,豆腐在汤里多煮汤会更鲜)

倒入红薯粉水,边倒边摇晃锅子,让红薯粉水与汤均匀揉和在一起。(火都不要开大)

汤变粘稠后,把火开大,倒进肉丝,用筷子搅开肉丝,待肉丝全变成白色,关火,趁汤有余温时放盐、生抽、胡椒粉、味精(可免)调色调味,最后撒上青葱粒淋麻油即可。(不喜欢麻油味的可免放)
