艿芋焖鸭的制作材料:主料:鸭小半只斩块,艿芋蒸熟去皮(生芋削皮时容易引发手痒现象),香菇泡软,卷心菜(高丽菜)
调料:清水/泡香菇水各一碗,麻油一大匙,米酒两大匙,辣豆辩酱一大匙,老抽/生抽各一大匙,糖/盐/味精各少许,姜片,辣椒。
做法 :
麻油烧热,放进姜片/辣椒片/鸭块翻炒爆香,注入清水/泡香菇水/米酒烧开后上盖,转小火烧煮约60分钟。加入艿芋/卷心菜/香菇和其它调味料,转中火继续焖煮10分钟。掀盖转旺火拌炒至汤汁稠浓即可。
